Recruited from the Dandenong Stingrays with pick 39 in the 1998 National Draft, Toby Thurstans endured a lengthy apprenticeship before establishing himself at AFL level. He spent his first four seasons developing in the SANFL, playing a key role in Sturt's 2002 premiership, before finally making his debut for Port Adelaide in 2003. A tall utility capable of playing at either end of the ground, Thurstans possessed strong marking hands but often battled for consistency and regular selection in a star-studded lineup. Despite oscillating between the senior side and the local league, his versatility eventually made him a valuable structural asset for coach Mark Williams.

His career is definitively anchored by a singular, pivotal performance in the 2004 Grand Final against the Brisbane Lions. Although primarily utilized as a defender throughout his career, Thurstans was deployed as a tall forward on the biggest stage, booting three crucial goals to help secure the Power's historic maiden premiership. While he largely returned to defensive duties in subsequent seasons and remained a fringe player until his retirement in 2009, that Grand Final cameo ensured his legacy as a cult hero at Alberton. He departed the game as a loyal one-club player and a premiership immortal.
